Domaine Achillea

Jean and Pierre Dietrich of Domaine Achillée are an integral part of the renewal of the vineyard in Alsace. It must be said that their father Yves had already switched the vineyard to organic farming in 1999 and biodynamic farming in 2003. It was therefore quite natural that in 2016, the two Dietrich brothers joined the adventure to give this estate Alsace a new impulse. With the aim of producing a wine without input, a natural wine, they seek to work primarily in the vineyard: small yields, quality of the berries above all and the richness of the Alsatian terroirs. In the cellar, Jean takes care of vinifying as naturally as possible all the Alsatian grape varieties present on the estate: Riesling, Pinot Gris, Pinot Noir, Pinot Blanc, Gewurztraminer, Sylvaner, Muscat. His minimally interventionist vision of winemaking is at the service of the natural wine he wishes to offer. For this, Jean Dietrich vinifies in a bioclimatic cellar where the cellar is maintained at 14 degrees. This is how spontaneous fermentations can take place peacefully. If necessary, a few homeopathic doses of sulphites are added during bottling. Apart from that, all inputs are absolutely prohibited at the Achillea estate. Domaine Achillea is a family story, resolutely focused on organic farming and biodynamics.

Among the vintages of Domaine Achillée, note the Crémant Zéro Dosage which for several vintages has now been on the pretty tables and has met with great success among all lovers of fine bubbles. The whites are obviously not left out with numerous Riesling, Gewurztraminer and other Pinot Blanc.
