Stéphane Saillet
Stéphane Saillet 's adventure began in 2020 in Vertus (Marne) with the desire to create wines from elsewhere by harvesting grape varieties from different origins on their preferred terroirs. Although based in Champagne, Stéphane produces wines with the Vin de France appellation. He gleans grapes from Alsace, Beaujolais and Burgundy. Before that, Stéphane trained as an oenologist (with stints at Viret and Zind-Humbrecht, among others) and worked as a cellar master in Burgundy.
Each cuvée is made from grapes from estates with which Stéphane Saillet works closely. Some cuvées are renewed from year to year, others are not. Each cuvée receives the same attention and the whole range highlights the specificity of a vintage and the rich diversity of the terroirs. Every year, the technical choices made (barrels, maceration or ageing times, de-stemming, etc.) are rethought with this philosophy in mind.
Cultivation practices that respect the living environment, spontaneous fermentation without sulphites in oak or glasscontainers and theabsence of filtration enable Stéphane Saillet to produce wines that are natural, fresh and easy to digest.
