Domaine de Bichery
Domaine de Bichery, located in the Côte des Bar region, has been cultivating a few hectares organically since 2014. Hannah et Raphaël Piconnet took over part of the family estate in Neuville sur Seine. Raphaël's family have always been winegrowers, and organic farming became an obvious choice very early on. It's this love of the vine that guides their work and defines their cuvées. One plot, one wine. That's how things are done at Domaine Bichery.
Around 5,000 bottles of Pinot Noir, Pinot Meunier and Chardonnay are produced each year. The wine is matured in barrels, without any inputs. Fermentation is natural, using indigenous yeasts. The wines are neither fined nor filtered. Hannah and Raphaël want to reflect their work in the vineyard as closely as possible, so all their champagnes are made from a single harvest and are not blended.
