Etienne Thiebaud

After gaining valuable experience with Pierre Overnoyetat Domaine de la Tournelle, Étienne Thiébaud set about creating his own wine venture in 2007 with Domaine des Cavarodes. This estate covers 5 hectares of vines, stretching from the south of Arbois to the north of Arc-et-Senans. Étienne is committed to producing natural wines, covering renowned appellations such as Arbois and Côte du Jura, as well as vins de pays from Franche-Comté. The vineyard is a treasure trove of varying ages, with some vines having seen the light of day 15 years ago, while others have stood the test of time valiantly for 115 years. Étienne has chosen to cultivate these precious vines according to the principles oforganic farming, emphasising a deep respect for the terroir. His working methods are a return to traditional practices, characterised by theabsence of weedkillers and particular attention paid to soil compaction. He has reintroduced ploughing andgrassing of the plots, allowing the vines to flourish in a natural environment. Étienne Thiébaud uses a variety of grape varieties, notably Chardonnay and Savagnin for the white wines, and Trousseau, Ploussard and a touch of Pinot Noir for the reds. In the north of the appellation, he continues to grow old varieties such as Portugais Bleuand Enfariné, which he hopes to rehabilitate and replant. The work in the cellar is orchestrated in harmony with the lunar calendar, with the aim of producing natural, unadorned wines. Étienne emphasises the simplicity and efficiency of his wines, which are designed to faithfully reflect the Jura terroir. Today, Étienne Thiébaud has become an undisputed benchmark for natural Jura wines.
