Maison Gautheron d'Anost
Bastien Gautheron, who cut his teeth with Olivier Leflaive, launched Maison Gautheron d'Anost in 2020. The vineyards are mainly located in the Savigny les Beaune appellation for the reds and the Hautes Côtes de Beaune for the whites. To preserve the authenticity of the terroir, Bastien adopts a low-intrusive approach to winemaking. He uses small-capacity stainless-steel vats, cooled only during vatting to allow natural fermentation. Grapes are handled sparingly, with extraction limited to two punch-downs before alcoholic fermentation, followed by daily pump-overs. The wines are aged exclusively in barrels, the oldest dating from 2014. Part of the white wines are matured in 350L barrels to preserve the subtlety of the juices without being dominated by wood. For the reds, a slight passage in new barrels is carried out, with less than 30% in all cases. Committed to an ecological approach, Bastien opts for bottles from St-Prex, a Swiss glassmaker using 95% recycled glass. The labels are made from 100% recycled paper, and the corks are natural, organically grown and TCA-certified, thus reducing the carbon footprint.
