Domaine Cotzé
Wilfried Cotzé settled in 2019 in the place called Bajande, in the commune of Estavar in Cerdanya on the border with Spain, in the Eastern Pyrenees. He then set up with his idea and his overall desire: that of a mixed-culture farm carried out with the purest respect for nature and these productions. At an altitude of 1300m, he decided to plant vines and orchards (apple trees, pear trees, quince trees of old and rustic varieties) for the future production of juice and cider and also a little market gardening (potatoes). . He began planting his vines in 2020 with 90 acres of various grape varieties such as Savagnin, Sylvaner, Altesse, Pinot Noir, Chardonnay, Mondeuse and Gamay. Then some time later, he continued the expansion of his estate with a second plot, of 1.10 ha this time, which he planted with Chasselas, Altesse, Pinot Noir, Mondeuse and Gamay. . However, we will have to wait at least ¾ years before all these grape varieties begin to produce and in the meantime, Wilfried will set up his trading project “Transhumància” (Transhumance in Catalan). This time it is grapes, necessarily worked in organic farming, selected from Roussillon, which he will transport to his high-altitude cellar to vinify them in the most natural way possible. Carignan, Muscat, Mourvèdre and other Syrah are worked there, vinified naturally and without any input. Thanks to them, Wilfried produces wines which do not lack originality, freshness and above all delicacy.
