Gardened Wines
With an Agricultural Technician Certificate in “Wildlife Management” followed by a BTS in “Nature Management and Protection”, Yoann Gillot developed a passion for wine. His career led him to complete an internship with two winegrowers on the island of Oléron.
Through internships, woofing experiences, and even a trip across Europe by bike, Yoann Gillot enriched his contacts and consolidated his desire to set up as a winemaker. His philosophy is to do everything with his own hands, in an artisanal way, on a small area of vines, with the ambition of restoring the prestige of Muscadet, a wine too often underestimated in his eyes.
With a certificate in specialization in viticulture, winemaking, and marketing of wines in organic farming, Yoann created the Vins Jardinés estate in 2018, located in Monnières, on the slopes of Sèvre Nantaise. Burgundy Melon, Folle Blanche, Gamay thrive on its 3.6 hectares of granite soil, sandy gabbro, and silt, all under Organic Agriculture certification and managed with the greatest respect for nature, of course! Because, at Yoann Gillot, the approach is part of a biodynamic perspective, associated with rigorous practices to maintain the soil. These practices include late grassing to promote biodiversity, the use of comfrey, horsetail and nettle manure, essential oils, horn dung preparation, and many others. The harvest is obviously manual, and the grapes are handled delicately in small boxes to avoid any damage.
The meticulous care that Yoann brings to his vineyard continues in the cellar, where rigor is required. The wines mature on the lees, in underground glass vats, a regional particularity. The yeasts are natural, and if a small dose of sulfur is necessary to protect certain vintages, it is maintained at very low levels.
Yoann's wines are very representative of their terroir, fruity, fresh, and very easy to taste, whether for his white or red wines.
