Champagne Chavost

For now two vintages, Champagne Chavost shake up our vision of cooperative work. Chavost is the old name of the commune of Chavot-Courcourt, so it was obvious for winegrowers loving their land and their village to give this name to their cooperative when they created it in 1946. It is in this cooperative winery that Fabian Daviaux decided to experiment with natural winemaking in 2020. It isolates a parcel of 5 hectares already conducted in organic, harvest with the greatest care the grapes, and starts the adventure. The champagnes of Fabian and his team are not dosed and made without added sulphites. It thus seeks to offer singular, identity and atypical wines.  An atypical and courageous project to discover, whose wines are refined year after year.
