Novice
Yves Roy founded the Novice estate with his wife Christelle in 2014 when they bought 5 hectares of vines in Poligny. Freshly retrained as a winemaker, Yves completed his training with Valentin Morel. Established on his native land, he decides to work as naturally and simply as possible, he works his vines mechanically while respecting the principles of organic farming and those of biodynamics, without synthetic products. The idea is to implement work in the vines which allows each plot to stand out naturally, highlighting its terroir. The harvest is done manually and the work in the cellar is done just as naturally as that in the vineyard. During spontaneous fermentations, the golden rule is that you don't touch anything. No sulphites in the wines, no filtration and only natural yeasts. Then the aging takes place over 1 year, in vats, in barrels, and we finish with a little rest in the bottle while the wines settle into place. The wines from the Novice estate are small bombs of fruit and complexity which are the direct expression of the Jura grape varieties and terroirs.
