Le Petit Domaine de Gimios, located in Gimios, above Saint-Jean de Minervois, was created by Anne-Marie Lavaysse who started this story in the 90s. Anne-Marie and Pierre cultivate a small vegetable garden for vegetables, raise cows for milk and manure, and maintain fruit trees to promote their food independence. The estate covers approximately 5 hectares of vines, made up of sixteen plots with native varieties, some of which are over a hundred years old. The soils are schisto-limestone and rocky, located at around 320 meters above sea level. Anne-Marie favors a natural biodynamic approach and does not use any chemical additions, including sulfur, throughout the winemaking process. Natural wines that are both frank and digestible.
