Coming from a viti-oeno training and agricultural engineer, Anne Buiatti of Maison Ad Vinam spent 10 years in Languedoc before finding her footing in Bordeaux. In Graves and more precisely in Saint Morillon, 30 minutes south of Bordeaux, where she and her husband Grégoire fell in love in front of this old stone farm surrounded by stony hillsides, forest but above all 2 hectares of vines. The decision is made, to leave the south-east of France to settle in the south-west and too bad if they have just bought 2 hectares of Syrah on shale precisely in Roussillon, in Calce. This will allow them to play on two different vineyards, and especially on blends with a Rhone profile in the heart of Bordeaux. Grégoire will then renovate the building with the aim of transforming the old barn into a winery and Anne will be responsible for vinifying the Sémillon, Sauvignon, Merlot, Malbec and Cabernet Sauvignon, which in addition to the Syrah from Calce, make up the grape varieties. of the domain.
Like, she likes to point out, yes Anne makes wine, but not only that! Indeed, the approach of Maison Ad Vinam is part of a more global project; for illustration, orchards, chickens and sheep are an integral part of the organization of life on the estate, as are the hives. The couple's approach here is part of a peasant production approach that respects nature, all, of course, worked without inputs (the estate is labeled Vin Method Nature). Anne makes her own herbal teas, composts and silicas herself to tone and revitalize her land and her vines. in other words, master the entire global process for the creation of straight, controlled and precise wines.
