Domaine Houillon
Houillon? Does this name sound familiar to you?
It's not for nothing. Indeed, Aurélien and Charlotte are both from Franche-Comté, from Jura more precisely. Aurélien will learn the secrets of natural wines and their vinification thanks, among others, to his brother Emmanuel and all alongside the great Pierre Overnoy.
His brother taking over the reigns of the legendary Jura estate, Aurélien also became a full partner in 2007.
2014 marks his departure for Switzerland where he will then convert an estate to biodynamics, but above all where he will be able to extend his experience of natural wines to other grape varieties than those he already masters. Three years later, the moment of reflection arrives and the decision falls: it's time to settle down!
Charlotte and Aurélien then arrive at Faucon, at the foot of Mont Ventoux, where 9 hectares of vines, woods and moors await them, all in one piece. A clayey and sandy terroir, very particular for the region due to the formation of safres. They obviously decide to always work with this same natural philosophy. The grapes are entirely destemmed and vinified without any chemical inputs from aging to bottling.
