Clovallon

The Clovallon estate is a separate estate in Haut Languedoc. Located in Bédarieux, in Hérault, the 12 ha vineyard faces due north on the slopes of a dolomitic valley and is located between 250 and 400 m above sea level. Here the proximity of the mountains offers beautiful thermal amplitudes, the days are hot but the nights very cool. Which can pose a problem with the region's endemic grape varieties... but that's what Catherine Roque, who founded the estate in 1989, will make it her business. After extensive discussions with ONIVINS (National Interprofessional Wine Office) she obtained a derogation accompanied by an authorization to plant Pinot Noir, the flagship grape variety of her estate, as well as an authorization to include this grape variety in the production of Pays d’Oc wines. Catherine Roque knows how to move the lines. She therefore decides to opt for a “northern” grape variety, she will plant in addition to her Pinot Noir, Chardonnay, Riesling, Viognier and even Syrah. Since 2012, her daughter Alix has joined her and managed the Languedoc farm with her. All the work is carried out in the most natural way possible, she works her plots biodynamically, and is certified by Demeter, the harvest is manual and the vinification is as minimally interventionist as possible. A very slight addition of sulfur can be made but only if the winegrowers deem it necessary.
