Domaine de la Borde
Let's join Julien Mareschal in the marly valleys of Pupillin, where he set up Domaine de la Borde in 2003, without having the slightest family connection with the vine. Born into a family of cereal growers, Julien chose to study agriculture before taking up viticulture and winemaking. He has returned to his native Jura, where he has farmed 5 hectares of vines organically and biodynamically since 2012. Respect for the terroir is essential to Julien Mareschal, and this is reflected in his vision by the principles ofnatural grassing and working the soil by hand, without chemicals. Domaine de la Borde is made up of native grape varieties such as Ploussard, Trousseau, Pinot Noir, Chardonnay and Savagnin, which express themselves through different parcels whose soils and exposure give them their typical character, producing natural terroir wines on a family scale. Julien Mareschal 's work in the winemaking process is based on the purest respect for the wine, with fermentation using indigenous yeasts, no inputs and minimal doses of sulphur.
