Thibaud Capellaro is a young winemaker based in Condrieu, the appellation where Viognier is king. Armed with his promising beginnings, he stands out for his audacity in thinking outside the box of regional conventions in Côte-Rôtie and Condrieu. After studying business, he chose to follow his passion for wine and created his own winery. He gained valuable experience working alongside different winemakers in France (André Perret, Domaine Joblot, Château le Devay, Domaine Duclaux) and Australia (Adam Foster, Syrahmi). From humble beginnings renting a basement, he recently moved to a spacious new winery, conducive to experimentation and growth. Thibaud’s project consists of two distinct parts. First, there is “Slope”, a négociant project, where he sources grapes from small farmers and winemakers in the region, all practicing organic farming. These vineyards are located in Ardèche, in the Monts du Lyonnais, in the Gard, and even in Italy, in Piedmont. The second part of his project is his own estate, where he grows his own grapes. Thibaud bought two plots from François Bouillot-Salomon, as well as other unused plots from a local farmer. These lands, once neglected due to their less-than-ideal exposure, have become an asset in the face of climate change and the ever-rising temperatures in the region. Thibaud has been working on these plots for three years, planting and rebuilding the terraces. Thibaud’s winemaking has some particularities for the region, where routine often prevails. He clearly takes a natural approach, favoring minimal intervention, using only indigenous yeasts and spontaneous fermentations. His goal is to highlight the full range of aromas and flavors of the fruit and the terroir, rather than focusing on winemaking. He experiments with different types of containers, such as old oak barrels, stainless steel, fiber, as well as terracotta and ceramic. Thibaud is transparent about the use of sulfur dioxide (SO2): he adds it to some wines when they need it, while others do not contain it, and only at the time of bottling. Thibaud's wines reflect his personality: honest, original, and indifferent to convention. They are straightforward and modest, gradually revealing a depth and structure that are fully discovered with time.

A superb boutique offering some very fine natural wines that are off the beaten track. One drawback: the bottles are very expensive overall: it would be nice to enrich the range with affordable/pleasurable wines.

Several specifications correspond to these denominations. Here's an overview of the different organic, biodynamic and natural specifications:Organic specifications (AB label) prohibit all use of synthetic chemicals in the vineyard and cellar. It does, however, allow for a few oenological crutches during vinification. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites. In biodynamic viticulture (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He also uses biodynamic preparations (fermented horn dung, silica, plant teas, etc.) to strengthen the vines. Overall, the winegrower seeks to integrate vine cultivation into a global environment. Sulphites can be as low as 70 mg/L for reds and 90 mg/L for whites. In Vin Méthode Nature, the specifications specify the use of organic grapes, fermented naturally with indigenous yeasts (as in biodynamic viticulture). Natural wines receive no inputs during vinification or ageing. Only minimal doses of SO2 are permitted (30 mg/L maximum), and must be specified by the winemaker. No brutal filtration or alteration techniques are permitted. We also find the Vins SAINS designation, which aims to ban the use of sulfites altogether.

Our aim is to offer you wines made by artisans, from small-scale estates, often family-run. That's why we take the time to travel the length and breadth of France, from vineyard to vineyard, in search of the natural wines that make us tick. We're particularly keen to help you discover the new winemakers of tomorrow, who are working tirelessly to bring us magnificent wines. We want to showcase them, give them greater, clearer visibility, and accompany them all the way to you!
