Nothing predestined Fabrice Domercq to become a winemaker in the Bordeaux region, absolutely nothing! Fabrice started the Ormiale adventure with his friend Jasper Morrisson. He is a visual artist and Parisian designer living in Milan, and Jasper is an industrial designer in London. However, in 2007, they found themselves at the helm of the Ormiale estate located in the Entre-Deux-Mers region, a few kilometers south of Saint-Emilion. It was while helping his mother look for a country house for her retirement, a quest that led him in 2006 to this side of Bordeaux to an old farmhouse backed by a former winery and a few plots of vines, that the idea was born for Fabrice. From now on, it was time to make wine, and a natural one at that! They then acquired 2 hectares of vines located in the Côtes de Castillon and Côtes de Francs regions. A lifelong friend, Jasper also embarked on this crazy adventure and the first vintage of Ormiale was released in 2007. The estate then chose to work biodynamically and was certified by Demeter. Little by little, Fabrice took matters in hand and Jasper moved away from the daily life of the estate. In 2022, Fabrice took over a new winery dug into the rock in the heart of Saint-Emilion. It is here, at a cool and constant temperature, that he will be able to continue the Ormiale adventure. All harvests are carried out manually and all the bunches are destemmed by hand, the rest is done by gravity, therefore no pumps, either in a tronic vat or in a stainless steel vat. The aging is often done in wooden containers: oak barrels, sometimes cherry wood, of 225, 500 and 600 liters and for a duration of approximately 18 months. Fabrice is constantly inventing, researching, and experimenting. Proof of this is the Lies cuvée, which is made from lees and other winemaking residues usually drained. The Ormiale estate thus offers us resolutely modern, precise, and disconcertingly profound Bordeaux wines. Great Bordeaux wines!

Who we are?

Clara has worked in the spirits industry for many years. She has contributed to the great renown of Archibald - the French distillery tonic made near Bordeaux - and of the Folle Envie aperitif. A native of the Ile d'Oléron and the daughter of fishmongers, Clara's values include respect for fresh produce, short supply chains and a passion for nature.

Baptiste grew up on the island of Oléron. He worked for a biodynamic winery in Burgundy & discovered natural wine several years ago. Since then, he has traveled extensively in France and elsewhere to meet these passionate winemakers.

Several specifications correspond to these denominations. Here's an overview of the different organic, biodynamic and natural specifications:Organic specifications (AB label) prohibit all use of synthetic chemicals in the vineyard and cellar. It does, however, allow for a few oenological crutches during vinification. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites. In biodynamic viticulture (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He also uses biodynamic preparations (fermented horn dung, silica, plant teas, etc.) to strengthen the vines. Overall, the winegrower seeks to integrate vine cultivation into a global environment. Sulphites can be as low as 70 mg/L for reds and 90 mg/L for whites. In Vin Méthode Nature, the specifications specify the use of organic grapes, fermented naturally with indigenous yeasts (as in biodynamic viticulture). Natural wines receive no inputs during vinification or ageing. Only minimal doses of SO2 are permitted (30 mg/L maximum), and must be specified by the winemaker. No brutal filtration or alteration techniques are permitted. We also find the Vins SAINS designation, which aims to ban the use of sulfites altogether.
