Clément Lavallée
Clément is the son of winegrowers, vines and wine, so he has always known that. After studying viti-oeno, as well as a stint at the Chapoutier houses and at Château Margaux, he decided in 2019, with the help of his sister Caroline, to take over the family estate. The entire family estate? Initially no, he will only concentrate on 1.5 hectares (out of a total of 23 hectares!) which he will rent while taking advantage of the family infrastructure. He then decided to ban all use of synthetic chemicals and to harvest at the last moment in order to guarantee optimal grape quality. In the vatting, he decided to work by gravity and to limit the use of So2 as much as possible. Clément wants straight, pure and unvarnished wines.
After a more than successful first 2019 vintage, he recovered a few hectares in the Saint-Bris and Côtes d'Auxerre appellations, but also in Courgis in the AOC Chablis, and he will thus become a neighbor of Thomas Pico (Domaine Pattes Loup) as well as from the De Moor estate. He then selects the most qualitative plots, but remains on an estate on a human scale.
We met Clément and Caroline during a day in Chablis in spring 2023. Their vision, the quality and integrity of the wines as well as the ambition of the project seduced us. Many plots in Chablis and elsewhere are in the pipeline, and we look forward to showing them to you.
Today, Clément and Caroline are entering the big leagues, and we are very proud to be able to support them in this adventure.
