Petit Clergeot
Maison Petit Clergeot has its roots in Polisot, in the heart of the Côte des Bar region. Paul-Bastien Clergeot took over from his father in 2017. He inherited a very interesting vineyard between Polisot, Les Riceys, Balnot-sur-Laignes and... Montgueux! Influenced by the leading lights in the village - notably Roland Piollot - 'Paulo' decided from the outset to work organically. He will be certified from the 2021 vintage. No herbicides or synthetic products are used on the estate. He works the soil and treats the vines only with sulphur and copper.
Contrary to the practice in Champagne, he decided to work plot by plot, grape variety by grape variety and vintage by vintage. On his plot in Chevry, which is cool because it borders the river, he decided to produce a lively, energetic and delicate Champagne. His work in the cellar is adapted to this quest: ageing in vats, low dosage and fine bubbles.
This is just the beginning of the adventure for the young winemaker from Polisot, but there are still many plots waiting to be vinified, to our great delight...
