O2Y
O2Y is a micro-business located in Poligny in the heart of the Jura. It was founded by Olivier Guala, Yves Roy and Yoshi Nori. Their cellar is located in Poligny. O2Y is a project of three friends who are crazy about natural wines. Since 2020, he has been enjoying vinifying grapes from all over France to create a multitude of natural wine vintages that transport us to the heart of the French vineyard. Once the harvest has come, they travel across France to look for grapes that respect their values and respect for nature, in order to embark on long vinifications and make wine as naturally as possible. The main regions which allow this production of nectars with unique tastes are: Alsace, Beaujolais, Jura and a little in the South-West. The list of grape varieties recovered is long and there are numerous winemaking methods at O2Y to obtain superb juices. Very long pressing, carbonic or semi-carbonic maceration, blending of Pinot Noir with Pinot Gris, the three friends have a blast. The wines are made without added sulphites of course, without filtration or fining and alcoholic fermentations start with natural yeasts.
