Béru Castle

The origins of Château de Béru date back to the 11th century, when Cistercian monks settled on this Chablis hill. This enclosure - probably the oldest in Burgundy - of some 5 hectares is today under the responsibility of Athénaïs de Béru. The vines were replanted by her father in the 1980s. On her return to the estate, she applied the principles of biodynamics with her team. The objective is simple in appearance: for each plot to find, thanks to biodynamics, its own balance. Observation of living things, the use of preparations, herbal teas and essential oils and above all years of work have made it possible to achieve this objective. Terroir and vintage are the two key words of the estate.
The Chardonnays that are produced there are then vinified with as few inputs as possible, without this being a dogma; certain vintages which require it are slightly sulphated. Athénaïs prefers to play with harvest dates, pressing cycles or barreling to accompany the spirit of the vintage. Some wines are aged in vats (Aligoté for example), others spend several months in wood (some Chablis in particular).
Athénaïs also offers some wines through its trading, mainly from Yonne and Burgundy.
