Paul Pillot

Domaine Paul Pillot , located in Chassagne-Montrachet, is a key reference in Burgundy . Founded in 1900, it is now managed by Thierry Pillot, representing the fourth generation. The estate cultivates its vines using sustainable viticulture, with meticulous soil work and an approach close to natural wines, limiting inputs and favoring indigenous yeasts. In the cellar, vinification is intended to be minimally interventionist to preserve the purity of the fruit and the expression of the terroir. Fermentations are natural, aging on fine lees lasts 12 to 18 months , and the use of new wood is reduced to a minimum (10 to 20%) in order to maintain the balance and tension of the wines. The estate is renowned for its Chassagne-Montrachet whites, particularly the premier crus " Les Grandes Ruchottes ", "La Romanée" and "Clos Saint-Jean", vintages prized for their finesse, precision and saline depth.
