At just 25 years old, Fanny Sabre took over her family’s Burgundian estate in 2005, bringing a new wave of energy and freshness to the winemaking adventure. She leaned on the valuable teachings of her mentor, Philippe Pacalet, over three years to carve her own path. From the start, the estate based in Pommard converted to biodynamic farming. The five appellations, from Beaune to Pommard, are meticulously tended with utmost respect for nature. In the vineyards, the work is monumental — soils are gently ploughed, vines flourish fully and freely.
Natural vinification with finesse and precision
In the cellar, Fanny orchestrates a vinification symphony where every detail is a declaration of love for purity. White wines, aged on fine lees, and red wines, treated with semi-carbonic maceration, bear the hallmark of an exceptional winemaker. The winemaking process — carried out without sulfites or with only homeopathic doses — reflects her commitment to making clean, honest, and expressive wines.
