La Chaume des Lies

Margaux and Lothar meet during their visit to Pierre Fenals of Maison en Belles Lies. It is there that they learn the basics of organic and biodynamic agriculture, winemaking without inputs... At the end of 2020, they found 2 hectares of vines in Côte de Beaune, in the villages of Auxey, Bouzeron and Saint- Aubin. A winery opens in Baubigny. La Chaume des Lies is born and the first 2021 vintage is ready to be vinified.
Educated at a good school, Margaux and Lothar work their vines without any synthetic chemicals, and respecting the lunar calendar. In the cellar, everything is precision and support. The couple seeks to limit their interventions as much as possible to let the vintage and the plot speak. They work with Aligoté, Chardonnay and Pinot Noir.
On a first 2021 vintage that was nevertheless complicated, the couple enchanted us with precise, chiseled whites. The reds are crunchy and juicy. To be continued !
