The Domaine de Jérôme Chapel , located in the communes of Laps , Saint-Maurice-ès-Allier , and Saint-Georges-sur-Allier , covers 3.5 hectares . Benefiting from a southern exposure on the Puy Saint-Romain, at an altitude of 450 to 550 meters, the estate rests on a clay-limestone and basalt terroir.

A self-taught winemaker between heritage and independence

A patient and committed foundation

Jérôme Chapel , who comes from a family tradition of cooperative viticulture, founded his own estate from scratch, carrying out his first harvest in 2009 after training in Mâcon. He favors small yields to obtain concentrated wines and sells directly at the estate and at fairs, fostering a close relationship with his customers.

Natural vinifications, with a view to aging

Aspiring to organic production and to develop wines for laying down , Jérôme is moving forward cautiously, with natural vinifications. The management of grass under the rows of vines and the aging on lees of his rosé and white vintages are testament to his efforts.

Jérôme also plans to welcome visitors to a wine-themed gîte, capitalizing on the growing appeal of the Auvergne vineyards, and notes that younger generations are increasingly receptive to the region's wines.
