Domaine Hauvette
The Hauvette estate is undeniably one of the most beautiful estates in Provence.
After a life as a lawyer or even a building painter, Dominique Hauvette settled in 1988 by purchasing 2 hectares of vines on the clay-limestone soils of Saint Rémy de Provence, in the heart of the Alpilles and decided to become a winegrower. She quickly opted for agriculture with biodynamic cultivation principles so as not to disturb the osmosis between the vine and its environment. Her assets are her meetings, like those with Eloi Dürrbach from the Trevallon estate and Laurent Vaillé from the Grange des Pères, but also her intuition which will carry her to this day and hopefully for a long time! She works her vines with small yields, manually without any input. In the cellar the vinification is done without sulfur and with complete destemming of the grapes and the aging is done systematically in concrete eggs which accentuate the minerality of these terroirs.
Dominique produces wines that are among the most beautiful and renowned in France: straightforward, fresh and sincere. They reflect the talent of Dominique Hauvette as well as their exceptional terroir. A unique expression of Baux de Provence with reds and a few rare whites which combine delicacy, minerality and elegance.
