Le domaine Complémen'Terre est niché au sud du massif armoricain, élevant ses vignes sur une butte qui s'élève à 52 mètres d'altitude. Une démarche écologique et éthique guide leur travail, et le domaine est fier d'être certifié Agriculture Biologique. Depuis 2018, il a également obtenu la certification Nature et Progrès, reconnaissant son engagement en faveur du respect de la nature et de l'humain. Les vignes du domaine sont réparties sur quatre terroirs distincts, tous situés à moins de 2 kilomètres à la ronde. Ces terroirs se caractérisent par une prédominance d'Orthogneiss, une roche mère présente sur une partie des bords de Sèvre. Les orientations et les failles géologiques donnent naissance à des terroirs aux caractéristiques variées. Le Melon de Bourgogne, la Folle Blanche, le Cabernet Franc et le Cabernet Sauvignon sont les cépages qui prospèrent dans ces conditions. Au domaine Complémen'Terre, la qualité est au cœur de la démarche. Toutes les vendanges sont effectuées manuellement et les raisins sont triés avec rigueur pour obtenir un jus de la plus grande qualité. Les fermentations se font naturellement, sans l'ajout de produits chimiques. Selon leurs convictions et les besoins des vins, une faible quantité de sulfites (maximum 40 mg/l au total) peut être ajoutée après les fermentations lactiques et malolactiques. Les opérations de vinification suivent au maximum le calendrier lunaire pour respecter au mieux les rythmes naturels. Le domaine insiste sur l'importance des vendanges manuelles, car elles sont essentielles pour comprendre l'identité propre à chaque parcelle. Les vins du domaine Complémen'Terre sont majoritairement produits par pressurage direct, sans macération. Cependant, de petites expérimentations sont tentées au fil des années. Les fermentations se font grâce à des levains préparés par leurs soins. Une semaine avant le début des vendanges, ils récoltent une première pressée pour créer un Pied de Cuve. Les fermentations se déroulent naturellement, suivies d'une transformation Malo lactique (transformation de l'acide malique en acide lactique). Enfin, un soutirage est effectué pour permettre un élevage en cuve. Le domaine Complémen'Terre produit une dizaine de cuvées, dont Nolem, La Croix Moriceau, des Muscadets d'une grande finesse, idéaux pour accompagner les produits de la mer.

Who we are?

Clara has worked in the spirits industry for many years. She has contributed to the great renown of Archibald - the French distillery tonic made near Bordeaux - and of the Folle Envie aperitif. A native of the Ile d'Oléron and the daughter of fishmongers, Clara's values include respect for fresh produce, short supply chains and a passion for nature.

Baptiste grew up on the island of Oléron. He worked for a biodynamic winery in Burgundy & discovered natural wine several years ago. Since then, he has traveled extensively in France and elsewhere to meet these passionate winemakers.

Several specifications correspond to these denominations. Here's an overview of the different organic, biodynamic and natural specifications:Organic specifications (AB label) prohibit all use of synthetic chemicals in the vineyard and cellar. It does, however, allow for a few oenological crutches during vinification. Sulfites, for example, are tolerated up to 100 mg/L for red wines and 150 mg/L for whites. In biodynamic viticulture (Demeter or Biodyvin label), the winemaker not only works without synthetic chemicals, but also takes into account the lunar calendar for all the operations he carries out. He also uses biodynamic preparations (fermented horn dung, silica, plant teas, etc.) to strengthen the vines. Overall, the winegrower seeks to integrate vine cultivation into a global environment. Sulphites can be as low as 70 mg/L for reds and 90 mg/L for whites. In Vin Méthode Nature, the specifications specify the use of organic grapes, fermented naturally with indigenous yeasts (as in biodynamic viticulture). Natural wines receive no inputs during vinification or ageing. Only minimal doses of SO2 are permitted (30 mg/L maximum), and must be specified by the winemaker. No brutal filtration or alteration techniques are permitted. We also find the Vins SAINS designation, which aims to ban the use of sulfites altogether.
