Bienvenue dans l'un des domaines emblématiques de la viticulture naturelle en Loire : le Clos du Tue Boeuf ! Le Clos du Tue Boeuf, dirigé par les frères Thierry et Jean-Marie Puzelat, a connu un nouveau souffle au début des années 1990 lorsqu'ils ont repris ce domaine de 16 hectares. Un élément clé de cette histoire est que les vignes n'avaient jamais été exposées à la chimie, offrant ainsi une opportunité exceptionnelle aux deux frères. S'inspirant du regretté Marcel Lapierre, ils ont immédiatement entrepris de produire des vins naturels sur cette propriété située entre les appellations Touraine et Cheverny, à proximité d'Hervé Villemade dans La Loire. En peu de temps, le domaine s'est agrandi, intégrant le Clos historique des Montils, qui couvre un peu plus de 11 hectares, ainsi que des parcelles sur le plateau de Monthou-sur-Bièvre, totalisant environ 3 hectares. Cette extension a permis d'ajouter à la diversité du terroir d'argile à silex sur craie un terroir de sables avec graviers. Les quelques hectares restants sont réservés à la préservation de la forêt et des zones sauvages pour maintenir un écosystème équilibré. En 2003, les frères Puzelat ont créé une structure de négoce pour acheter des raisins à des vignerons partageant leur philosophie pendant les années de récolte maigre. En 2004, une structure d'importation de vins étrangers a vu le jour. En 2019, Jean-Marie a pris sa retraite, laissant la place à la nouvelle génération. C'est à ce moment-là que les filles de Thierry, Zoé puis Louise, ont rejoint le Clos Tue-Boeuf à temps plein, inspirées en partie par l'héritage de la cave qui a influencé de nombreux jeunes vignerons. Le domaine s'engage dans une viticulture biologique et privilégie autant que possible la traction animale pour travailler les vignes. Les vinifications utilisent exclusivement des levures indigènes, sans recours à d'autres intrants chimiques, à l'exception d'un usage éventuel de soufre en très faible quantité lors de la mise en bouteille (et encore, ce n'est pas systématique). Les vinifications et les élevages sont prolongés pour affiner les jus. Les vins du Clos du Tue Boeuf sont rapidement devenus des références en matière de vins naturels, salués pour leur franchise et leur sincérité. Originaires de la belle région de la Loire, ces vins sont incontournables pour toute cave à vin qui se respecte.

Clara has worked in the spirits industry for several years. She has contributed to the renown of Archibald - the French distillery tonic made near Bordeaux - and the Folle Envie aperitif. A native of the Ile d'Oléron and the daughter of fishmongers, her values include respect for fresh produce, short supply chains and a passion for nature.

Baptiste grew up on the Ile d'Oléron. He worked for a biodynamic wine estate in Burgundy and discovered natural wine several years ago. Since then, he has travelled extensively in France and elsewhere to meet these passionate winemakers.

They also use biodynamic preparations (fermented horn dung, silica, plant teas, etc.) to strengthen the vines.
